kefir mah lai ko

A short post today. First of all, wishing everyone a fantastic Lunar New Year celebration. May the coming year be better than the previous one and bring prosperity, happiness and joy to you. 新年快乐,万事如意,恭喜发财!

This is another kefir water project.

The recipe is spotted from My Little Space. The changes I made:

  • Used 210 grams of vanilla castor sugar
  • Used bread flour instead of all purpose flour.
  • Fermented starter dough for 15 hours
  • Fermented main batter for 12 hours

Texture is amazingly bouncy, yet soft and slightly chewy. Loved the fragrance!
